Ingredients

1 prime rib roast (bone-in or boneless)
Salt and freshly ground black pepper
2 tablespoons  olive oil or softened  butter
3–4 cloves garlic, minced
1 tablespoon fresh rosemary or thyme (optional)
Asparagus spears
Baking potatoes
Sour cream, butter, bacon bits (for serving)

Instructions

Let the prime rib rest at room temperature for 1 hour; season generously with  salt, pepper,  garlic, and herbs.
Roast at 230°C / 450°F for 20 minutes, then reduce to 165°C / 325°F and cook until desired doneness (medium-rare ≈ 52–54°C / 125–130°F internal).
Rest  meat 20 minutes before slicing to keep it juicy.
Roast or sauté asparagus with olive oil and salt.
Bake potatoes until tender; top with butter, sour cream, and bacon bits.
Slice, serve, and enjoy that wowmoment.
